Meal Plan Monday



Sunday- Stuffed Pablano Peppers

Pablano Peppers-

Ground Beef

olive oil
onion
garlic
corn/black beans/ I used drained veg baked beans. I'm not a fan of baked beans but these are good stuffed.

cooked rice (brown)
pepperjack cheese, grated

cumin

salt/pepper
Crushed red pepper

garlic powder

onion powder

Heat up olive oil and cook chopped onions and garlic. Add ground beef, salt, pepper, garlic, onion and cumin, breaking up the meat. Once cooked add rice and, if you are me, more cumin (I have a problem). Mix in corn, beans and grated cheese saving some for the top. Even though I have about 100lbs of corn in my freezer I forgot to add it:(

Wash Pablano Peppers, cut a t shape in the middle and dig out seeds. Warning: Wear gloves while doing this. Even thought the peppers themselves are not hot, their seeds will burn your hands!!! Ask me how I know.....Rub the inside and out with olive oil. Stuff them with mixture and top with more cheese. Sometimes I add hot sauce, too.

Have your husband cook on the grill on low until peppers are soft. You can serve with Spanish rice instead of putting the rice inside of the peppers. Eli doesn't like rice unless I hide it in things.

Eli was busy so I cooked them on the grill! It was my first time and I think I did a fabulous job.




Monday- Roast, Potatoes, Carrots- CP

Tuesday- Orange Pork Loin- CP

1lb Pork Loin

1/3 soy sauce

1/3 orange marmalade

1/3 honey

1T + 1t rice wine vinegar
pinch of red pepper flakes

1t ground ginger

This is a combo of recipes I found on line. I'm going to mix all ingredients together and add on top of pork in the crock pot. I will cook on low all day. I'll let you know how it turns out!

Wednesday- Chicken fried rice.
Thursday- Cardamom Honey Chicken

This recipe I found at Simply Recipes. Eli always cooks Indian food with cardamom and I've always wanted to try it out.

4T honey

2T sherry (I don't have any sherry so I'm going to use apple cider vinegar.)
1t cardamom seeds, ground

1t peppercorn, ground

Chicken breast

olive oil

1 lemon, I use limes

salt and pepper.

Mix first 4 together and pour over chicken. Let sit for 1/2 hour. Fry in pan with oil to give a crust on outside. Cut up lemon (lime) and put it in glass baking pan, add chicken and pour over sauce. Salt and pepper. Cook 15-20 minuets.

Saturday-Going to Oklahoma!

How long are you staying? I'll be at a family reunion Saturday and Sunday, but I'd love to see you! And I have pics of Emma for you!
