I've already done most of my shopping for the week and I've only spent half of my $!!! I'm sure I can find something to spend the rest of it on;)
Here's what we will be eating this week:
Sunday:
Roast, potatoes, carrots
Left over from the 4th for dinner
Monday:
CHICKEN SPAGHETTI
Tuesday:
Baked Chicken, corn
Tabbouleh
2 cups cracked wheat (Bulgar)
2 cups very hot water
1 cucumber, chopped
2 small tomatoes, chopped
1 bunch green onions, (8) sliced
1/2 cup fresh chopped mint
2 cups fresh chopped parsley
1 clove garlic, minced (optional)
Dressing:
1/2 cup fresh lemon juice
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
2 T soy sauce
1 tablespoon pepper
2 teaspoons salt, or to taste
Soak the cracked wheat in the hot water until the water is absorbed, about 30 minutes.
Drain any excess water, if necessary, and squeeze dry.
Combine the salad ingredients, including wheat, in a medium bowl.
Mix the dressing ingredients together and stir into the salad mixture.
Serve chilled or at room temperature.
Makes about 8 cups, 12 to 16 servings.
This is always better the next day so I will be making it on Monday.
Wednesday:
Beans and Cornbread w/bell peppers
Thursday:
Burrito Pie
1 dozen tortillas
1 lb of ground beef,
taco seasoning
2 cups of refried beans and cheese
Preheat oven to 350 and spray a baking dish with pam spray. You can use a 2 qt round casserole dish, a 13x9 inch baking dish or pie plate, it just depends on how much you want to make. Cook the ground beef and season according to packet directions. Layer 4 tortillas onto bottom of pie plate. Layer on half the beans and half the meat, sprinkle with cheese. Start new layers-tortillas, meat/beans and cheese. Top with last 4 tortillas. Bake until cheese is melted/bubble and heated through about 30 min. Top with sour cream and salsa and serve with a side of spanish rice.

I love browsing weekly menus because I get ideas for myself :) I love chicken spaghetti, but we haven't had it in a REALLY long time because I had forgotten about it. When you make your burrito pie, do you use corn or flour tortillas? It sounds yummy!
I've never made the burrito pie before but I think I'm going to use flour tortillas. I got it off the BBC but she didn't say what to use. I'm sure it will be good with either.
That burrito pie sounds delicious (and easy). Right now some ladies from church are bringing dinner over which is super-helpful, but I think that may be the first thing I cook when the "babymoon" is over and I have to cook for us again!
