Meal Plan Monday

I enlisted Eli's help for the Meal Plan this week. I needed help coming up with new ideas but we ended up using some of our favorites and some new.





Sunday-


Hamburgers on the grill, homemade potato salad, corn. We enjoyed it so much last week we wanted to have it again!





Monday-


Grilled Chicken (made on the grill on Sunday) Ranch Style beans and broccoli.


I'll do anything I can to not have to heat up the house because it's over 100 here everyday!





Tuesday-


Slow Cooker Steak Delight


1 1/2 pounds tenderized round steak, trimmed


1 package brown gravy mix


1 (10oz) can tomatoes and green chilies


1 packet onion soup mix


1 1/2 tablespoons Cajun seasoning





Cut steak into serving pieces. Cook gravy mix according to package directions. combine tomatoes and green chilies, soup mix and Cajun seasoning in blender. Put all ingredients into slow cooker and cook on High for 4 hours. Serves 4 to 6.





Wednesday-


Stuffed Bell Peppers


Cook ground beef with onions and garlic. Add seasonings to taste: salt, pepper, cumin, little red pepper, garlic salt, onion powder and what ever else you like! Mix with cooked rice. You can use plan rice, brown rice or a box of rice-a-roni for more flavor. Cut the top flat off the washed bell peppers like a hat. Scrap out seeds and rinse. Fill, leaving a little room on the top. Grate cheese (Cheddar or pepper jack) and put top back on. Cook on 375 for 15mins or so.





Thursday-


Homemade Pizza!!! I've never made pizza dough before so I'm excited to see how it works out.





Whole Wheat Honey Pizza Dough-


1 (.25 ounce) package active dry yeast
1 cup warm water
2 cups whole wheat flour
1/4 cup wheat germ
1 teaspoon salt
1 tablespoon honey
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
In a large bowl combine flour, wheat germ and salt. Make a well in the middle and add honey and yeast mixture. Stir well to combine. Cover and set in a warm place to rise for a few minutes.
Roll dough on a floured pizza pan and poke a few holes in it with a fork.
Bake in preheated oven for 5 to 10 minutes, or until desired crispiness is achieved.





Tasty Pizza Sauce
1 (12 ounce) can tomato paste
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon coriander
3-4 crushed garlic cloves
1 tablespoon brown sugar
1-2 tablespoon red wine or balsamic vinegar
1Mix all the ingredient together and let sit for about 30 minutes.
2Spread on pizza and top your pizza as desired.
